  • For the crisp:
  • 6 tablespoons all purpose flour
  • ¼ cup of organic brown sugar
  • ¼ cup organic Turbinado raw cane sugar
  • ¼-teaspoon ground organic cinnamon
  • ¼-teaspoon fresh ground organic nutmeg
  • ¼-teaspoon sea salt
  • 2 tablespoons of organic rolled oats
  • 2 tablespoons of organic panko bread crumbs
  • 6 tablespoons of organic unsalted butter
  • ¾ cups course chopped nuts
  • For the fruit filling:
  • 2 pounds of organic peaches peeled pitted and cut into 1/3 inch wedges
  • 1 Granny smith apple peeled cored and sliced into wedges
  • 2 foot long pieces of rhubarb peeled and cut into ½ inch dice
  • ¼ cup of Turbinado raw sugar
  • Juice of one organic lime
  • Zest of half a lime

Directions
  1. Crisp
  2. In the work bowl of w food processor pulse the flour the sugars and salt.
  3. Add the butter and pulse ten times, about 3 to 4 seconds each pulse
  4. The mixture will resemble dry sand with large lumps of butter.
  5. Add the nuts then pulse for 5 times about one second each.
  6. Add the panko breadcrumbs and the rolled oats and pulse once for 2 seconds
  7. Refrigerate the topping for 15 minutes while you make the fruit
  8. Scoop the fruit into a 9 x 9 baking dish ant spread the crisp toping evenly over the top
  9. Bake in a preheated oven at 375-degree convection oven for 45 to 55 minutes
  10. * Note: A dollop of whipped cream or vanilla ice cream organic of course, is always a nice addition especially if you serve this warm.

Okay, Wow Michael!
This looks so good, and healthy. Cannot wait to make it for my family. You know me, it's ORGANIC, or it's NOTHING!!!
Going to require a stop at "Whole Foods" for a few ingreds that I am out of, but I have to go and stock up on these and other things anyway.
I'll let you know when I make it....which will probably be this weekend, if not next.
What we do in our home,.is have dessert once a week, and it's usually on Sunday. That's the rule! Even though my girls are 18 and 21, that's the way it is! My grandson is 2, and because he lives in our home, he follows that rule for the 'special' desserts as well. Of coarse I do give him some animal crackers, pudding etc, during the week. (organic, of coarse!) After all, I'm not going to go over-board on a little one. Not fair.
I know it sounds a bit obsessive to expect this of my girls at their age, but they know I'm just trying to help. (as well as teach them healthy habits for when they are FINALLY (LOL!!!) out on their own.)
Anyway...sorry for the novel!!
