Rosy Onion Soup Recipe
Similar to French Onion soup, but with a tomato element. This soup can also be made in the slow cooker, then just add the bread and cheese and broil before serving.

Ingredients
  • 4 cups onions(red or sweet, preferably), sliced very thin
  • 2 cloves garlic, chopped
  • 1 stick plus 1T butter(the T softened)
  • 1 can tomato juice or V8 type cocktail(about 48oz)
  • 1 1/2 cups stock(beef, vegetable)
  • fresh parsley, chopped
  • salt and pepper
  • 1 loaf French bread, sliced in 8 slices
  • 2 cups shredded Mozzarella cheese

Directions
  1. In Dutch oven or large soup pot, cook onions and garlic in butter until tender.
  2. Add tomato juice, stock, salt and pepper.
  3. Bring to boil stirring occasionally.
  4. Reduce heat and simmer for about 30 minutes.
  5. Lightly butter both sides of all slices of bread.
  6. Spoon soup into oven safe bowls, top each with one slice of bread and add 1/4 cup cheese to top of bread.
  7. Broil about 3 minutes until cheese is melted.
  8. Top with parsley and serve immediately.
