Ingredients

How to make it

  • Cook potatoes in boiling water 15 minutes or until fork tender, drain.
  • Heat oil in a nonstick skillet over medium-high heat.
  • Add onion, bacon, pepper and garlic.
  • Saute 2 minutes or until tender.
  • Preheat broiler.
  • Cut potatoes in half, carefully scoop potato pulp, leaving a 1/4" shell.
  • Mash the potato pulp with a fork, stir in cheese and sage.
  • Add to onion mixture, stirring well.
  • Spoon about 1 Tbsp. potato mixture into each shell.
  • Arrange stuffed potatoes on a baking sheet and broil 3 to 4" from heat.
  • Broil 3 minutes or until lightly browned.

    Oh my goodness, silver - I will have a difficult time sharing these! Love the filling, and the idea of using the little reds instead of big twice-baked style potatoes. Thank you so much for sharing this fun idea - will do this for company soon!
