Jumbo Seafood Shells Recipe

Ingredients

Aprx 30 jumbo shells, cooked

Sauce:

6 Tbsp butter

6 Tbsp flour

4 cups milk

1/4 cup chopped parsley ( Italian is best )

salt and white pepper, to taste

Filling:

1/2 lb. cooked shrimp ( or combination of shrimp and crabmeat) chopped

2 cups ricotta cheese

1 1/2 cups grated cheddar cheese

1 1/2 cups grated mozzarella cheese

2 eggs, beaten

1/2 tsp salt and dash pepper

Directions

For Bechamel Sauce:

Melt butter in saucepan over med. heat. Blend in flour. Cook stirring constantly until smooth and bubbly. remove from heat to stir in milk

( Shine says to heat milk first for better sauce)

Return to heat and heat to boiling stirring constantly ( this part takes awhile) When boiling continue cooking for 1 minute while stirring. Remove from heat and add salt ,pepper, and parsley. Stir.

For Shells:

in large bowl combine remaining ingredients, and fill cooked shells. Spread about 1 1/2 c sauce on bottom of 9x13 " pan, and arrange filled shells in single layer on top . Pour remaining sauce over the shells and bake at 375 for about 20 minutes or until sauce bubbles.

I would probably add some grated Parmesan on top before baking. just a personal preference and it would get nice and golden I think. Hope you like it.
