Ingredients
  • Aprx 30 jumbo shells, cooked
  • Sauce:
  • 6 Tbsp butter
  • 6 Tbsp flour
  • 4 cups milk
  • 1/4 cup chopped parsley ( Italian is best )
  • salt and white pepper, to taste
  • Filling:
  • 1/2 lb. cooked shrimp ( or combination of shrimp and crabmeat) chopped
  • 2 cups ricotta cheese
  • 1 1/2 cups grated cheddar cheese
  • 1 1/2 cups grated mozzarella cheese
  • 2 eggs, beaten
  • 1/2 tsp salt and dash pepper

Directions
  1. For Bechamel Sauce:
  2. Melt butter in saucepan over med. heat. Blend in flour. Cook stirring constantly until smooth and bubbly. remove from heat to stir in milk
  3. ( Shine says to heat milk first for better sauce)
  4. Return to heat and heat to boiling stirring constantly ( this part takes awhile) When boiling continue cooking for 1 minute while stirring. Remove from heat and add salt ,pepper, and parsley. Stir.
  5. For Shells:
  6. in large bowl combine remaining ingredients, and fill cooked shells. Spread about 1 1/2 c sauce on bottom of 9x13 " pan, and arrange filled shells in single layer on top . Pour remaining sauce over the shells and bake at 375 for about 20 minutes or until sauce bubbles.
  7. I would probably add some grated Parmesan on top before baking. just a personal preference and it would get nice and golden I think. Hope you like it.
