How to make it

  • In large skillet, brown sausage for about 5 minutes. Drain leaving a small bit of grease in the pan.
  • Slice eggplant in half, remove and chop meat, but make sure to leave some "meat" in the shell so it holds up to cooking.
  • In same skillet add small amount of olive oil to grease and add eggplant meat, mushrooms, bell pepper, onion and garlic and cook until just tender, about 5 minutes.
  • Add bread crumbs, Parmesan cheese, Italian seasoning, salt and pepper to vegetables and mix to combine.
  • Place eggplant shells in jelly roll or large glass baking dish, lightly sprayed, and spoon stuffing mixture into each shell.
  • Top each with shredded cheese.
  • Bake for about 45 minutes at 350 until eggplant is fork tender.

    Used Mini Eggplants for this. Quite filling and rich! Subbed ground beef for Italian sausage, used red bell pepper, added an egg to help bind it all together, threw in a few extra shakes of spices cause that's how I roll. Turned out great! Thanks Keni!

    I have an egglant omelet recipe (not posted here) which everyone got tired of through the years (including me) but I continue to make it because well, how else can you make eggplant better aside from parmiggiana? This recipe sounds really good and I'm glad I saw it! Must try and high5 to you!

    Ha...now, you see, there, there's a joke just waiting to come out with that comment, but I just don't know you well enough. ;) BUT, to answer the question, you betcha....zucchini would do just fine and the baking time would be about the same, even. Let me know if you try it! Also, I'll add, you can add a can of diced tomatoes to the stuffing if desired, too.

    I've never cared for eggplant, but this does sound good. Jake was reading over my shoulder and said "that sounds good." He's always been so open to "new foods" - LOL I should take a lesson.
