Ingredients
  • 4 tablespoons organic butter divided
  • 1 large organic shallot, minced
  • 2 packages of dried organic morel mushrooms
  • 4 ounces of small organic portabella mushrooms
  • Broth from Rehydrated organic Morel mushrooms
  • 1/4 cup white wine
  • 1 teaspoon or more fresh organic thyme, chopped
  • 3 tablespoons flour
  • 1/4 cup organic heavy cream
  • 1/4 cup fresh organic parsley or cilantro, chopped
  • A small pinch of Organic nutmeg
  • Salt and fresh ground black pepper to taste

Directions
  1. Rehydrate the dried mushrooms in 2 cups boiling water rinse and set aside.
  2. Strain the stock and set aside
  3. In a pan add the first amount of butter over medium heat and add the shallot, cook until tender.
  4. Add the mushrooms to the pot. Add the broth from the Morel mushrooms, wine, and salt and pepper if desired.
  5. Bring to a boil and then turn down heat and simmer for about ten minutes. In a separate pan make a roux with two more tablespoons of butter and the flour.
  6. Pour the mushroom mixture into the roux and bring to a boil, turn down the heat and stir until thickened.
  7. Stir in the heavy cream the pinch of nutmeg, and parsley.
  8. Serve over warm turporken balls with a side of twice-baked mashed potatoes.

What a nice sauce! As you know, I love mushrooms!

This whole "turporken" thing reminds me of a meatloaf recipe from the cafe I worked at. It's made with ground pork and turkey and is really yummy. I'll have to make it soon so I can post the recipe and share it with you :-)
