Sauce For Turporken Balls

- 4 tablespoons organic butter divided shopping list
- 1 large organic shallot, minced shopping list
- 2 packages of dried organic morel mushrooms shopping list
- 4 ounces of small organic portabella mushrooms shopping list
- broth from Rehydrated organic Morel mushrooms shopping list
- 1/4 cup white wine shopping list
- 1 teaspoon or more fresh organic thyme, chopped shopping list
- 3 tablespoons flour shopping list
- 1/4 cup organic heavy cream shopping list
- 1/4 cup fresh organic parsley or cilantro, chopped shopping list
- A small pinch of Organic nutmeg shopping list
- salt and fresh ground black pepper to taste shopping list
How to make it
- Rehydrate the dried mushrooms in 2 cups boiling water rinse and set aside.
- Strain the stock and set aside
- In a pan add the first amount of butter over medium heat and add the shallot, cook until tender.
- Add the mushrooms to the pot. Add the broth from the Morel mushrooms, wine, and salt and pepper if desired.
- Bring to a boil and then turn down heat and simmer for about ten minutes. In a separate pan make a roux with two more tablespoons of butter and the flour.
- Pour the mushroom mixture into the roux and bring to a boil, turn down the heat and stir until thickened.
- Stir in the heavy cream the pinch of nutmeg, and parsley.
- Serve over warm turporken balls with a side of twice-baked mashed potatoes.
