How to make it

  • Rehydrate the dried mushrooms in 2 cups boiling water rinse and set aside.
  • Strain the stock and set aside
  • In a pan add the first amount of butter over medium heat and add the shallot, cook until tender.
  • Add the mushrooms to the pot. Add the broth from the Morel mushrooms, wine, and salt and pepper if desired.
  • Bring to a boil and then turn down heat and simmer for about ten minutes. In a separate pan make a roux with two more tablespoons of butter and the flour.
  • Pour the mushroom mixture into the roux and bring to a boil, turn down the heat and stir until thickened.
  • Stir in the heavy cream the pinch of nutmeg, and parsley.
  • Serve over warm turporken balls with a side of twice-baked mashed potatoes.

    What a nice sauce! As you know, I love mushrooms!

    This whole "turporken" thing reminds me of a meatloaf recipe from the cafe I worked at. It's made with ground pork and turkey and is really yummy. I'll have to make it soon so I can post the recipe and share it with you :-)
