How to make it

  • Heat oven to 400° F.
  • Place the fish in a small roasting pan. Add enough wine (about 3/4 cup) to reach halfway up the sides of the fish. Scatter the olives, capers and lemon zest around the fish. Drizzle with the oil and season with 1/2 teaspoon salt, 1/4 teaspoon pepper, and the red pepper. Roast until the fish is cooked through and flakes easily with a fork, about 20 minutes.
  • Remove from oven; plate the fish, leaving the sauce in the pan. Whisk in the butter to smooth out the sauce and sprinkle with the parsley. Divide the fish among individual plates and spoon the olives and wine sauce over the top.
  • (As an alternative cooking method, you could brush the fish with olive oil and grill it. Create the sauce by reducing the wine slightly and throwing the remaining ingredients into the wine, heat through and finish the sauce w/the butter. Spoon mixture over fish and serve.)

    This looks absolutely wonderful! My boyfriend says he doesn't like olives...WHO in their right mind doesn't like OLIVES? lol Guess I will have to feed them to him anyway. This looks amazing. Val said she tried it and loved it, it's on my list to try soon. Thanks for sharing.

    Absolutely delightful dish C2max. I took your suggestion and smothered the fish (orange roughy) with diced tomato. It's a meal in and of itself.
