Cod With Olives And Lemons

- 4 nice fillets of Pacific cod or some other white fish fillets (such as halibut) shopping list
- 3/4 cup dry white wine (such as Sauvignon Blanc) shopping list
- 1/2 cup mixed olives (green, Kalamata, etc.) shopping list
- 1 TB capers shopping list
- Zest from 1 lemon, cut into strips shopping list
- 1 tablespoon olive oil shopping list
- kosher salt and pepper shopping list
- 1/4 teaspoon red pepper flakes shopping list
- 1 TB cold butter shopping list
- 1/4 cup fresh flat-leaf parsley, chopped shopping list
How to make it
- Heat oven to 400° F.
- Place the fish in a small roasting pan. Add enough wine (about 3/4 cup) to reach halfway up the sides of the fish. Scatter the olives, capers and lemon zest around the fish. Drizzle with the oil and season with 1/2 teaspoon salt, 1/4 teaspoon pepper, and the red pepper. Roast until the fish is cooked through and flakes easily with a fork, about 20 minutes.
- Remove from oven; plate the fish, leaving the sauce in the pan. Whisk in the butter to smooth out the sauce and sprinkle with the parsley. Divide the fish among individual plates and spoon the olives and wine sauce over the top.
- (As an alternative cooking method, you could brush the fish with olive oil and grill it. Create the sauce by reducing the wine slightly and throwing the remaining ingredients into the wine, heat through and finish the sauce w/the butter. Spoon mixture over fish and serve.)

Absolutely delightful dish C2max. I took your suggestion and smothered the fish (orange roughy) with diced tomato. It's a meal in and of itself.
