Vegetable Medley Recipe
I had an abundance of misc colors of peppers and a large zucchini and tried something a little different - turned out great

Ingredients
  • 1 cup onions (sliced into thin strips)
  • 1 1/2 cups red bell pepper (sliced 1/4" strips)
  • 1 cup green pepper (sliced 1/4" strips)
  • 1 cup orange pepper (sliced 1/4" strips)
  • 1 cup yellow pepper (sliced 1/4" strips)
  • 3 cups zucchini (diced in 1/4" cubes)
  • 28 oz san marzano tomatoes (with juice)
  • 5 tbsps garlic (sliced)
  • 1 tsp red pepper flakes (crushed to your taste)
  • 3 tbsp EVOO
  • 1 tsp Italian seasonings (dried)

Directions
  1. In large saute pan add EVOO and onions cook 2 mins and add remaining ingredients (except tomato) - cook for approximately 20 mins or until you have your desired dones of the peppers and zucchini - add tomatoes and cook till warmed through - this can be served immediately - or left to sit and served room temp - you can add any variety of veggies you might like ie mushrooms etc - serve it with a turkey or chicken sausage as I have before or just keep it vegeterian ....the possiblities are endless.

LOVE IT!!!!!!!!
I do a similar dish just using no oil. I use the spray and after cooking the onions I use about 1/2 cup of chicken broth and let them simmer for a few minutes.
