Ingredients
  • Crust:
  • 2 cups flour
  • ½ tsp salt
  • 12 tbsp butter, cold and diced
  • 7 tbsp iced water
  • Apple filling:
  • 1/3 to 2/3 cup sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • 8 medium sized apples (a medium apple = about 1 cup)
  • 2 tbsp butter
  • 2 tbsp milk, for glazing

Directions
  1. Make crust:
  2. Mix flour and salt in a food processor, add diced butter and process until mixture resembles bread crumbs. Add iced water and mix until dough forms a ball. Turn the dough onto a lightly floured surface, knead it together, and then divide in half.
  3. Flatten each half into a disk, wrap and chill for at least half an hour.
  4. Roll out one of the disks on a lightly floured surface until you have a circle of 12 inches in diameter.
  5. Put the circle in a 9" pie plate, trimming any extra dough from the edges with a rolling pin. Return it to the refrigerator until you make the filling.
  6. Heat oven to 390F.
  7. Peel, core and cut the apples into dices .Mix sugar, flour, nutmeg, cinnamon, and salt in large bowl. Stir in apples. Pour into pastry-lined pie plate. Dot with butter .Cover with top crust and seal the edges. Cut slits in the top. Using a cookie cutter make decorative shapes with the rest of the dough (hearts flours or leaves).
  8. Glaze with a little milk on the top. Bake for 40 minutes or until golden brown.
  9. Serving idea:
  10. Cut into wedges, scoop vanilla ice cream ball over the top and drizzle with rich caramel sauce.

Apple pie is something I keep saying I am going to bake soon...there is always something else that I need to bake first. Your pie looks so beautiful with the cut-outs on top. Recently I bought a pie trim. It is something that presses down on the crust like a cookie cutter. I need to use it and make a pie real soon!!

I have to agree, Ahmed - it is hard to beat a good apple pie with a crispy crust (and all that butter in your crust is bound to make it light and flakey!!) and a side of vanilla ice cream or caramel sauce...it IS a classic!
