Charred Tomato Pineapple Salsa Recipe

This is how i make most of my salsas all year around, Grilled to enhance the flavors and add natural smokiness.(Oh and this is one of my salsa recipes that took first place..This one took the red salsa division)

Ingredients
  • 2 large beefsteak or heirloom tomatoes(keep whole)
  • 1 large red sweet onion cut in to 1/2in. onion ring discs
  • 1 thick slice of fresh skinned pineapple equaling about 1 cup
  • 2 tablespoons adobo sauce from canned chipotle
  • 1lime zested and juiced
  • 1/4 cup chopped cilantro
  • 1 tablespoon honey
  • olive oil
  • salt & pepper to taste

Directions
  1. Heat BBQ or Grill
  2. oil salt and pepper first 3 ingredients generously
  3. cook over medium high heat turning accordingly
  4. tomatoes are done once they are very soft and charred
  5. pineapple is done once it is slightly charred
  6. onions are done once they are charred and nice and tender
  7. leaving 1/2 of the charred skin on chop the tomatoes, pineapple and onion
  8. place in a bowl and add remaining ingredients mixing well
  9. adjust salt and pepper to your liking

The chipotle used in your recipe along with the chard tomatoes gives it a nice aromatic and smoky flavor.
