Charred Tomato Pineapple Salsa

- 2 large beefsteak or heirloom tomatoes(keep whole) shopping list
- 1 large red sweet onion cut in to 1/2in. onion ring discs shopping list
- 1 thick slice of fresh skinned pineapple equaling about 1 cup shopping list
- 2 tablespoons adobo sauce from canned chipotle shopping list
- 1lime zested and juiced shopping list
- 1/4 cup chopped cilantro shopping list
- 1 tablespoon honey shopping list
- olive oil shopping list
- salt & pepper to taste shopping list
How to make it
- Heat BBQ or Grill
- oil salt and pepper first 3 ingredients generously
- cook over medium high heat turning accordingly
- tomatoes are done once they are very soft and charred
- pineapple is done once it is slightly charred
- onions are done once they are charred and nice and tender
- leaving 1/2 of the charred skin on chop the tomatoes, pineapple and onion
- place in a bowl and add remaining ingredients mixing well
- adjust salt and pepper to your liking

The chipotle used in your recipe along with the chard tomatoes gives it a nice aromatic and smoky flavor.
