Ingredients

How to make it

  • Cook penne to package directions, drain and set aside in a large bowl.
  • In a medium saucepan, combine butter, heavy cream, and parmesan cheese. Cook over medium low heat until cheese is melted and heated through.
  • In a skillet, saute shrimp,mushrooms, shallot and garlic in olive oil until shrimp are pink and shallot is soft; add to cream mixture.
  • Slowly add crumbled gorganzola to cream mixture and stir until gorganzola is completely melted and mixture is heated through.
  • Add parsley, reserving 1 tablespoon. Add salt and pepper to taste.
  • Add this mixture to cooked penne and mix to combine thoroughly. Sprinkle reserved parsley over the top.

    Never tried nor heard of Gorganzola cheese, any help? Would LOVE to try this dish, although sadly I'm not as versed in Italian dishes as many are!

    This might be on the menu this weekend...Have penne, gargonzola and shrimp just waitin' to meet. Thanks for the addition! :)
    EDIT--This WAS on the menu this weekend and it was fantastic! The sauce didn't end up being as thick and creamy like an alfredo, rather it just coated the pasta with a rich, wonderful bit of bitey goodness! ;) Other than adjusting for feeding a lot of hungry people and using right from the garden green onions, I don't think I changed anything.
