Ingredients

How to make it

  • Place ingredients for dressing in a food processor or blender, emulsify, then set aside.
  • Meanwhile, cook pasta "al dente" according to package directions.
  • When pasta is done cooking, drain and rinse under cold water and place in large serving bowl.
  • Pour dressing over pasta.
  • Toss in artichokes, olives, onion, bell pepper and feta cheese.
  • Mix lightly until all ingredients are coated with dressing.
  • For best results, refrigerate for 4 hours to allow flavors to meld.
  • Enjoy!
