Really Good Mediterranean Style Pasta

- Dressing: shopping list
- 1/2 cup extra virgin olive oil shopping list
- 1/4 cup vinegar shopping list
- juice from 2 lemons shopping list
- 1/4 cup freshly chopped rosemary shopping list
- 1/4 cup freshly chopped greek oregano shopping list
- 2-3 cloves garlic, minced shopping list
- 1 tbsp. sugar shopping list
- Dash or 2 each of cayenne pepper and paprika shopping list
- salt and pepper to taste shopping list
- Salad: shopping list
- 1 lb. box tri-color rotini noodles shopping list
- 1 14 ounce can of artichokes, drained and chopped shopping list
- 1/2 cup sliced kalamata olives shopping list
- 1/2 cup diced red onion shopping list
- 1 red bell pepper, largely diced shopping list
- 4 ounces crumbled feta cheese shopping list
How to make it
- Place ingredients for dressing in a food processor or blender, emulsify, then set aside.
- Meanwhile, cook pasta "al dente" according to package directions.
- When pasta is done cooking, drain and rinse under cold water and place in large serving bowl.
- Pour dressing over pasta.
- Toss in artichokes, olives, onion, bell pepper and feta cheese.
- Mix lightly until all ingredients are coated with dressing.
- For best results, refrigerate for 4 hours to allow flavors to meld.
- Enjoy!
