Black Truffle Mac N Cheese

- 1 Tbsp. extra virgin olive oil shopping list
- 1 small shallot, brunoise (finely chopped) shopping list
- 6 cloves of roasted garlic shopping list
- one pint of heavy cream shopping list
- one cup of french cognac, reduced to demi sec shopping list
- 2 tsp. fresh oregano, finely chopped shopping list
- 2 tsp. fresh thyme, stems removed shopping list
- 2 tsp. kosher salt shopping list
- 1 tsp. white pepper shopping list
- 8 oz. truffle cheese, finely grated (such as Sottocenere al Tartufo) shopping list
- 6 oz Parmiggiano reggiano,finely grated shopping list
- 1 tsp. chipotle powder shopping list
- 2 cups sweet french baguette, run thru food processor to turn into crumbs shopping list
- 1 lb Fresh pasta noodles (rigatoni or other noodle that will hold sauce), cooked in salt water to al dente shopping list
How to make it
- Heat oil on stove top in stock pot and then add shallots and roasted garlic and heavily sweat until aromatic. Add fresh herbs, cream and reduced cognac. Cook over low heat until reduced by half. Season and add parmesan and chipolte powder. To this hot mixture add the cooked and drained noodles and the truffle cheese and mix cheeses are melted. Taste noodles for seasoning and adjust as needed., Set aside.
- Butter baking dish, bottom and sides. Then add noodles and sauce to the dish and top with the crumbled croutons and a pinch of the finely grated parmesan and back in the oven at 350 degrees for 10 minutes or until mixture is bubbly and toasted on the top.
