How to make it

  • (Filling)
  • Cook chicken breast with 2 Tsp of olive oil in skillet. Add 1 Tsp Cumin and black Pepper and onions.
  • When Chicken is cooked through leaving chicken in skillet, deglaze with white wine.
  • In a large bowl, add chicken mixture, cream cheese, pimentos. Fold until ingredients are well distributed.
  • Stuff the Poblano Peppers with mixture.
  • Coat Peppers with olive oil.
  • Put stuffed peppers onto a half-sheet baking dish and bake at 400 degrees until peppers wilt.
  • Warm up refried beans and add 1 Tsp of cumin. Mix in well.
  • (Setting Up Plate)
  • Make a small bed of refried beans on plate.
  • Place one pepper in the middle.
  • Top with Shredded Cheese and serve Hot!

    You have created a very nice 5 type Relleno here. One of those dishes with a thousand variations. You might try reducing the Cream Cheese a bit as it can completely take over the flavor and shred the chicken. Chopping or dicing just doesn't happen in Mexico. The way you cook the chicken and deglaze the pan is verdad. Goza la vida! (Enjoy life!)

    Love chile rellenos! My favorite Mexican dish. I always stick the fresh peppers into the gas stovetop burners, and char the skin...then wrap them into a damp dish towel (or in a paper bag) so they steam, a little and the skins peels off easily. I also remove the seeds. I do the same with anaheim chile peppers...is that what you do?

    If there was a 10-fork this would be it! I LOVE, LOVE stuffed poblanos! But I do it with the usual sauteed ground round, minced potatoes & carrots then I whisk an egg, cover the filling and fry. Very plain. I'm definitely trying your recipe this week! This is great! Thanks Til!!!
