Ingredients
  • 1 1/2 lbs.chicken cutlets- cut into small cubes
  • 1 tbls. olive oil
  • 1 1/2 cups chopped onions(about 1 large size onion)
  • 8 oz. pkg. sharp cheddar cheese-shredded
  • 1 can (14oz.)low sodium chicken broth
  • 1 can (4oz.) chopped green chilies
  • 1 can (19oz.)cannellini beans-undrained
  • 1 box yellow rice-prepared according to pkg.
  • 1 tsp. garlic powder
  • 1 tsp. ground cumin
  • 1 tbls. chili powder
  • 1/2 tsp. oregano
  • 1/2 tsp. cilantro
  • 1/8 tsp. cayenne pepper

Directions
  1. Heat oil in very large saucepan over med.-high heat.
  2. Add chicken and onions - cook for 5-10 min.
  3. Stir in all dry spices - cook for 2 min.
  4. Stir in broth and green chilies - simmer for 30 min.
  5. Stir in beans - simmer for 10 min.
  6. Mix in cheddar cheese and prepared yellow rice.

OK, Lil, I made your chicken chili last night, and it was delicious! I used to always buy "white chicken chili" spice packs, but no more! Your recipe had just the perfect spices and ingredients in it! It was all gone in one night! This was the first time I tried yellow rice, it went so good with the chili! The only thing I did different, is I added cilantro in the very end, as I like my herbs fresh. Will definitely be making this many more times, thanks!

Made this last night and it was out of this world good...Loved the addition of rice....I've only had chicken chili once and used a packet for it....Not anything like this one...Hubby said it was outstanding so it's a keeper.


Ok...when I saw this yesterday I thought..I've got most of that! I already had chicken breasts cooked in the fridge (pleclare's onion baked chicken recipe). I used all of your seasonings as is except for cilantro (will make sure I have that next time), a whole 32 oz. box of chicken broth, extra beans (chili-mild) and no rice. All I had was instant rice and last time I put that in a soup it got mushy. I didn't stir in the cheese, just put that on top after bowled up. Very yummy...got thumbs up from everyone that tried it. My 21 year old nephew says it is 'fire'. I think that means it is really good. LOL

I will definitely be using this recipe again. :)


Oh I almost forgot...I had some diced tomatoes, about a half-can, in the fridge...I threw them in, too. :)

I just got done eating some for lunch....I am so full. Definitely fills you up!


Ijust love chicken chili this looks like a winner!


Yum! Very easy and good...oh yea and it didn't use a bunch of dishes...so points for easy clean up! I had trouble finding yellow rice and just as I was about to give up and use white...I found it all lonely on the bottom shelf wedged between some bags of jasmine rice...lol! I served this with Edensong's Honey Corn Bread and it was great! Next time I might throw some corn in to change it up. Thanks again Lillian!
