Ingredients
  • ½ lb. red tomato
  • ½ lb. red roma tomato
  • ½ lb. yellow roma tomato
  • ¾ lb. yellow tomato (½ & ½ of Lemon Boy and Golden Jubilee)
  • ¼ lb. large red cherry tomatoes
  • ¼ lb yellow pear tomatoes
  • ½ lb. pink tomato
  • 1 large whole green onion, chopped
  • ½ lb. red onion sliced thinly
  • ½ - 2/3 cup green bell pepper, diced
  • 12 oz. smoked Provolone cheese, small cubes or large shreds
  • ¼ cup grated Parmesan cheese
  • Grated Parmesan cheese for garnish

Directions
  1. Cut red and ½ of yellow tomatoes into wedges.
  2. Cut other half of the yellow tomatoes into chunks, not wedges.
  3. Cut romas into ½” slices’
  4. Cut cherry and pear tomatoes into halves.
  5. Cut pink tomato into wedges.
  6. Place tomatoes in large mixing bowl but do not stir or toss them.
  7. In another large bowl, separate the red onion slices into rings.
  8. (Reserve 1/3 of red onion slices for garnish.)
  9. Add chopped green onion and diced bell pepper to the 2/3 of red onion.
  10. Add Provolone cheese and grated Parmesan and toss.
  11. Add to the bowl of tomatoes, pour dressing over the top and lightly toss.
  12. Serve on beds of lettuce with wedges of toasted garlic bread.
  13. Garnish with Parmesan cheese and remaining red onions.
  14. Use what tomatoes are available to you, if you don't have such a wide variety at hand. It's still delicious, just not as showy.
  15. Extra fresh basil adds much to the flavor, add fresh basil to taste.

I also love tomatoes and this recipe sounds perfect. Thanks for sharing. Can I have a dozen or two of your home grown tomatoes?


Oh, this sounds awesome with fresh garden tomatoes. We have a dozen or so heirloom tomato plants a friend just gave us that we'll transplant as soon as our "frost" period is over and we're so excited about our anticipated "crop". I will try your recipe with supermarket tomatoes but I know it will be superb with garden fresh. And I love to make a colorful presentation too so thank you!


I think this will be superb! I love the idea of a smoky cheese with it and I might also add a chiffonade of basil...but now i remember the dressing has herbs in it doesn't it?

Alterations


I've also used Pepper Jack cheese on this, which gives it a zesty flavor.
Cubes of mozzerella are also an option instead of Provolne cheese.
