Flourless peanut butter chocolate chip cookies

These cookies are delicious and quick to make. I reduce the brown sugar to 1/2 c. and they're sweet enough for us!
Ingredients
- 1 c. chunky peanut butter shopping list
- 1 c. packed golden brown sugar (although 1/2 c. is sweet enough for us!) shopping list
- 1 lg. egg (or egg substitute) shopping list
- 1 t. baking soda shopping list
- 1/2 t. pure vanilla extract shopping list
- 6 oz. chopped semi-sweet chocolate (or chips) shopping list
How to make it
- Preheat oven to 350 & mix first 5 ingredients in medium bowl
- Mix in chocolate chunks
- Using moistened fingers form 1 T. cookie balls
- Arrange on 2 ungreased baking sheets 2" apart
- Bake cookies until puffed & golden on bottom about 12 minutes
- Cool on sheets for 5 minutes & transfer to racks until completely cool.
- These are wonderful ~ enjoy!
