I love me some Tyler Florence! These little bundles of sin literally melt in your mouth and are very addictive!

Ingredients
  • 40 small fresh mission figs
  • 8 ounces Manchego (or blue) cheese
  • 20 slices prosciutto, halved lengthwise

Directions
  1. Preheat the oven to 400 degrees F.
  2. Snip stems from figs. Cut the fig in half, but not all the way through, then cut the other half again to open it up. Stuff a date-size piece of cheese in the opening and press sides back up together to almost close.
  3. Wrap a piece of prosciutto around each to enclose like a little cocoon. Stand the figs on a sheet pan. Bake for 12 to 15 minutes so the prosciutto melts slightly and forms a skin around the figs.
  4. These are terrific hot or at room temperature.

I ommitted the cracked pepper because I like the delicacy of the figs without it. Another thing I did differently was I used TWICE the amount of cheese (cheese whore) ;-)

I love Tyler, too. I actually had something similar at Embrujo Flamenco ( it is a tapas restaurant in Toronto that has a Flamenco show, too). Delicious! Thank you for posting the recipe.
