- Two Mini-Muffin Pans (1-Ounce Cups) shopping list
- 1/2 cup ground almonds shopping list
- 1/2 cup confectioners' sugar shopping list
- 1/4 cup cake flour shopping list
- 1/4 cup granulated sugar shopping list
- 3 large egg whites shopping list
- 4 tablespoons unsalted butter, shopping list
- melted and still hot shopping list
- ¼ cup raspberry jam shopping list
- ¼ cup heavy cream, whipped shopping list
- 2 oz melted chocolate shopping list
How to make it
- Preheat the oven to 400 F. Line 20 mini-muffin cups with paper petit four cups.
- Place the slivered almonds in a food processor and process until finely ground, but do not over process. Transfer to the bowl of an electric mixer.
- Sift the confectioners' sugar and cake flour over the almonds. Add the granulated sugar and, using the whisk attachment, mix on low speed until combined. Add the egg whites one at a time, beating well after each addition. Scrape down the side of the bowl with a rubber spatula. With the mixer on, add the hot melted butter in a thin stream and mix until blended, about 30 seconds. Transfer the batter to a glass measure with a spout.
- Pour the batter into the paper cups, filling them three-quarters full. Insert 1 tsp jam in the center of each. Bake the financiers for 10minutes than lower the oven temperature to 360F and continue for another 15 to 20 minutes, until golden and a toothpick inserted in the center of a cake comes out clean. Cool completely in the pan on a wire rack. Decorate with whipped cream and chocolate
