Mexican Surprise

- 2 cups cooked rice (any variety) shopping list
- 1 can black beans shopping list
- 2 cans Rotel tomatoes with chilis shopping list
- 1 small bunch cilantro, finely minced (food processor works great) shopping list
- 1 onion, finely chopped, shopping list
- 1 small jar salsa (any variety of your choosing) shopping list
- 1 lb ground meat , cooked (completely optional and it can be venison, beef, or turkey burger) shopping list
- 1 can sliced black olives (optional) shopping list
- 1 cup sliced tomatillos (optional) shopping list
- 2 packs shredded cheese, Mexican ot Taco blend shopping list
- 1/2 pack taco seasoning shopping list
How to make it
- Mix the cilantro with the cooked rice (Remember a little goes a long way)
- Get the cassorle dish and line the bottom with the rice
- If using meat, blend with onion and taco seasoning
- If not using meat, saute onions and blend with taco seasoning
- Put the layer of meat/onions or onions on top of rice
- Top that with a layer of all of the beans
- Place a layer of the canned tomatoes on top of the bean layer
- Place layer of tomatillos on top of the canned tomato layer
- Place a layer of olives on the top of the tomatillos
- Plour the jar of salsa on top of this all
- Cover everything with the shredded cheese
- Cook for about 30 minutes or until you can smell it.
- If taking in a crockpot : make the dish the night before, refrigerate overnight , and start the dish on High about three hours before meal time then switch to Low about twenty minutes before eating.
- Serve with tortillas or with chips.
