How to make it

  • Cut pork loin into cubes. Marinade overnight in white wine, salt, pepper and garlic slices
  • In small pan cover the bottom with olive oil
  • Place the meat and cook till browned
  • Add clams, shrimp, white wine, parsley, bay leaf and tomatoe paste, and brown gravy package
  • Cook over low heat over covered pan (make sure to stir frequently so that the meat does not stick to pan)
  • While meat is cooking, fry potatoes.
  • Place them on the side of a Pyrex dish until meat is ready
  • When meat is ready, pour on top of the potatoes
  • Cook in over for about 45 minutes

    Finally!!! I found the carne alentejana recipe that uses the cubed fried potatoes. The potatoes soak up the juices from the pork and shrimp! I also make it with steamed clams.

    I cut the pork into disks and they were so tender and the gravy absorbed into the friend potatoes. Loved it! Thanks
