Carne de Porco a Alentejana

- pork loin cut into cubes (about 2-3 lbs) shopping list
- white wine (1/2 cup) shopping list
- garlic Gloves (3 sliced) shopping list
- salt & pepper shopping list
- olive oil shopping list
- clams (fresh in shells about 24) shopping list
- 2 lbs. shrimp (at least medium size) shopping list
- 1/2 cup white wine shopping list
- parslet shopping list
- 1 brown gravy package shopping list
- bay leaf shopping list
- tomatoe paste shopping list
- 8 potatoes (cut into cubes) shopping list
- Options: can add chicken (cubed) and smoked mexican sausage, such as chorizo or linquisa shopping list
How to make it
- Cut pork loin into cubes. Marinade overnight in white wine, salt, pepper and garlic slices
- In small pan cover the bottom with olive oil
- Place the meat and cook till browned
- Add clams, shrimp, white wine, parsley, bay leaf and tomatoe paste, and brown gravy package
- Cook over low heat over covered pan (make sure to stir frequently so that the meat does not stick to pan)
- While meat is cooking, fry potatoes.
- Place them on the side of a Pyrex dish until meat is ready
- When meat is ready, pour on top of the potatoes
- Cook in over for about 45 minutes
