I made this tonight and it was perfect! I made it as written except I used fresh thyme instead of dried sage (I'm not a fan of it) and my mushroom of choice was baby bellas. I also had to add more oil when browning the pork chops.

I loved the earthy flavor of the mushrooms with the seared pork and whiskey. This made plenty of delicious, creamy gravy...which went perfectly with mashed potatoes, as you suggested! I will make this often! I added my photo! :)

I seem to be on a porkchop kick, as there are so many good recipes posted. My husband doesn't like chicken (go figure) so this makes a nice alternative.

I have made this dish several times. It is quite tasty. I have a review of my first time at:
    http://blog.ladow.net/2006/04/20/one-pan-whiskey-flavored-pork-chops

I am a fan of the sauce. This is definitely a stick to the bones kind of a meal.
