Country Chuck Roast With Onion Gravy Recipe

Wonderful roasted beef and onion flavor. Great with homemade rolls and lots of mashed potatoes.

Ingredients
  • 4 lbs chuck roast
  • 1 tablespoon brown sugar
  • Salt and pepper (this is for the roast)
  • 1 large onion, peeled and whole
  • 5 cups water
  • 1/2 cup all-purpose flour
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon black pepper

Directions
  1. Rub the salt, pepper, and brown sugar into all the sides of the roast.
  2. Place the meat and the whole onion into an roasting pan.
  3. Roast in a 450°F oven for 15 minutes, flip the roast over and roast for an additional 15 minutes.
  4. Whisk together the water, flour, 1 1/2 teaspoon salt and pepper.
  5. Pour the flour mixture into the roasting pan and reduce the oven heat to 350°F and roast for 2 hours or roast for 3 hours at 300°F, flipping the roast over once at the midpoint of the cooking time.
  6. Cover the pan if the meat looks like it is drying out.
  7. Chop the onion into the gravy before serving.

Cooked it last night for my husband. He said it was the best chuck roast he ever had! I was so excited! Thank you for the recipe.
P.S. I skip the "chopping the onions into the gravy" part, but it tasted just great!


I just added some garlic but followed all else exact. I was very happy with the results. I would add more pepper. A also food processed the onion, garlic and gravy then reheated it. I sliced the roast, slightly seperated the pieces then nearly covered it in the gravy.

Sound like my kind of eats! I grew up on mashed potatoes and gravy. The brown sugar rub sounds interesting.
I'm going to whack up the onion right away to release the otherwise potentially pent up flavors. Ha. This definitely is the perfect place for a VADALIA. Yum.
