Ingredients

How to make it

  • In a large saucepan over medium heat, melt 1/4 cup butter
  • Saute the shallots 4-5 minutes until softened
  • Sprinkle in the flour and stir with a wooden spoon for 2 minutes
  • Whisk in sherry and broth and bring to a boil
  • Add the parsley and bring down to a simmer
  • Cook for 30 minutes, stir often
  • In another large skillet add remaining butter and add mushrooms
  • Cook mushrooms for about 6 minutes
  • Season the mushrooms with salt, pepper, cayenne and nutmeg
  • Whisk in creme fraiche or heavy cream
  • Add the chicken, pimiento, chives to the sauce
  • Simmer for 10 minutes and serve over biscuits, or toasted Italian bread
  • For a more formal look, if serving on a large platter, sprinkle outside of platter with chopped parsley and chopped finely chopped red pepper.

    Chicken A La King....ahhh yesss. I am trippin' down memory lane with this one. And this is the real deal. Completely homemade and luscious and flavorful. I haven't had this dish in a trillion years and am going to pay it a visit very soon. Sas, I bow before you in humble admiration, m'dear. You always make me sooo hungry. Thank you! :) Vickie

    jlv: You have to saute most of the ingredients anyway and you have to make the sauce separately so this recipe seems to not work well in a crock pot. However, you can do the chicken in the crockpot with vegetables and use it for your stock.

    my husband loves these type of dishes and he loves chicken, will need to make this the next time I make chicken,
