How to make it

  • Cream Margarnie, sugars, molasses, vanilla and eggs on medium speed for 3 minutes.
  • In a seperate bowl combine flour, salt, soda, cinnamon and oats.
  • Slowly add the dry ingredients to the wet mixture on low speed.
  • Drop by tablespoonfulls onto an ungreased cookie sheet 2-3" apart. (Batter will spread)
  • Bake at 350 degrees 10-12 minutes, it is important that you do not overbake so they will remain soft.
  • Allow to cool 3-5 minutes on pan and then transfer to a cooling rack.
  • To make the filling combine boiling water and salt in a small cup and set aside.
  • In a mixing bowl combine remaining ingredients and mix on low speed.
  • Pour in salt water and mix once more to combine.
  • Spread filling on the bottom of one cooled cookie and top with another to form a sandwich.
  • Repeat with all cooled cookies.
