Ingredients
  • Rack of Ribs (2 is what we do)
  • The Rub:
  • 1/4 Cup of Brown Sugar
  • 1/4 Cup of Paprika
  • 3 Tbsp. Kosher salt
  • 3 Tbsp. Ground black pepper
  • 1 Tbsp. Garlic Powder (Pete uses 2)
  • 1 Tbsp. Onion powder
  • 1 Tbsp. Celery seeds
  • 1 tsp. Cayenne pepper
  • 1 tsp. ground ginger
  • 1 tsp. ground tumeric
  • The Basting Sauce:
  • 1 1/4 Cups of cider vinegar
  • 1 small onion, minced
  • 1 tsp. hot red chili flakes
  • 1 Tbsp. kosher salt
  • 1/4 Cup brown sugar
  • 1 tsp. ground black pepper

Directions
  1. Combine all rub ingredients, set aside.
  2. Combine all basting sauce ingredients, refrigerate.
  3. Take rub and massage (rub) onto ribs.
  4. Refrigerate overnight.
  5. We use a upright barrel smoker with charcoal.
  6. cook in covered smoker for about 6-8 hours. We usually smoke towards 8 hours.
  7. Baste with basting sauce once every hour.
  8. Also since we have two racks in the smoker, we switch the meat from one rack to the other once also since one is closer to the heat.
  9. *Also for the extra flavor we use pieces of Applewood from my uncle's place.
  10. **if you are using a gas grill, maintain a heat of 250.
  11. These are fantastic!

That sounds great.i have a smoke recipe you might want to check out for ribs
its called 321
cover with your fav rub, wrap in saran wrap overnite
next day
3 hours on the grate of smoker spritz every hour with apple juice
during this period..watch for the meat to pull back from the end of the bone 1/8 -to 1/4 inch
if this happens foil them now..
after 3 hrs foil the ribs
for 2 hrs
after 2 hours in foil take out and mop them with you fav mop sauce for 1 hour
after 1 hour eat the dudes
what your looking for is the meat to come off the bone with a slight tug of the teeth.
this can be achieved buy how long they stay in the foil
if they fall off the bone. to long
if they tough not long enough

Good morning Kelly, I have been looking for a good Smoked Rib recipe. Thank you very much for sharing. You have my 5. Have a wonderful day... Cheryl

Gravy out of the smoker water
measure and reserve 1 tbl of fat skimmed from the dripping of the dripp pan. for each tbl of fat use 1 tbl flour
in sauce pan over med high heat
then stir in 1/2 cup of drippings and 1/2 cup of water cook until smooth and thickened.
for a kick but sauce
dip out a cup of drippings. add 1 tbl cornstarch
with a 1/4 cup of water in a sauce pan
stir in the cup of drippings then cook and stir over med high until comes to a boil and is smooth and thick

this was clear as mud huh

Thanks for the rub recipe Kelly, it sounds really good. I'm a firm believer that the rub (and tenderizer)really does make all the difference in the world. Thanks for the phone # & message. Will do.

I love this recipe. My attention span is way to short for me to smoke anything. Maybe my brother-in-law will make these for me. He makes great BBQ.

Wonderful recipe - thanks so much! I love smoked ribs... :)

I bet that ginger and tumeric make people ask a ton of questions...... in a good way. : )
