cover with your fav rub, wrap in saran wrap overnite
next day
3 hours on the grate of smoker spritz every hour with apple juice
during this period..watch for the meat to pull back from the end of the bone 1/8 -to 1/4 inch
if this happens foil them now..
after 3 hrs foil the ribs
for 2 hrs
after 2 hours in foil take out and mop them with you fav mop sauce for 1 hour
after 1 hour eat the dudes
what your looking for is the meat to come off the bone with a slight tug of the teeth.
this can be achieved buy how long they stay in the foil
if they fall off the bone. to long
if they tough not long enough

Gravy out of the smoker water
measure and reserve 1 tbl of fat skimmed from the dripping of the dripp pan. for each tbl of fat use 1 tbl flour
in sauce pan over med high heat
then stir in 1/2 cup of drippings and 1/2 cup of water cook until smooth and thickened.
for a kick but sauce
dip out a cup of drippings. add 1 tbl cornstarch
with a 1/4 cup of water in a sauce pan
stir in the cup of drippings then cook and stir over med high until comes to a boil and is smooth and thick
