Ingredients

How to make it

  • Break egg into a dish, add a pinch of salt and beat lightly with a fork. Leave egg for 10 minutes to thin.
  • Process panko crumbs in a food processor or liquidiser until fine, then pass them through a coarse sieve.
  • Drain olives and pat dry with kitchen paper.
  • Put flour in a small clean plastic bag, add olives and toss gently.
  • Tip olives into a sieve and shake off excess flour.
  • Pass olives through beaten egg then roll in crumbs.
  • Fry olives in shallow oil, turning them over carefully with two spoons, until golden and crisp.
  • Drain them briefly on kitchen paper.
  • Serve hot.

    We had an appetizer similar to this in Napa and loved it! The restaurant used a variety of olives - black and green - and then added a small amount of marcona almonds when served. Absolutely wonderful. Thank you for posting - can't wait to surprise DH with this one!
