Fried Fat Sicilain Green Olives

- 1 egg shopping list
- salt shopping list
- 1 cup panko crumbs, or fine dry breadcrumbs shopping list
- 1 cup fat green olives (Sicilian olives) shopping list
- 1 Tbsp plain flour shopping list
- oil for frying shopping list
How to make it
- Break egg into a dish, add a pinch of salt and beat lightly with a fork. Leave egg for 10 minutes to thin.
- Process panko crumbs in a food processor or liquidiser until fine, then pass them through a coarse sieve.
- Drain olives and pat dry with kitchen paper.
- Put flour in a small clean plastic bag, add olives and toss gently.
- Tip olives into a sieve and shake off excess flour.
- Pass olives through beaten egg then roll in crumbs.
- Fry olives in shallow oil, turning them over carefully with two spoons, until golden and crisp.
- Drain them briefly on kitchen paper.
- Serve hot.
