For those who cannot eat flour. Here is a cake that's every bit as good as if you used it. Enjoy! :)

Ingredients
  • 2 cups couscous, washed and steamed
  • 1 cup raisins
  • 1 cup diced apples
  • 3/4 cup water or apple juice
  • pinch of sea salt
  • Options: Add a pinch of Cinnamon

Directions
  1. Wash, drain and steam couscous for 5-7 minutes.
  2. Remove and fluff with chop sticks or a fork while cooking.
  3. Place apples, raisins, water (or juice) and sea salt in a sauce pan.
  4. Bring to a boil.
  5. Reduce flame to low, cover and cook until apples are done. This should take only 2-3 minutes.
  6. Remove and mix with couscous.
  7. Place mixture in a cake pan and spread out evenly.
  8. Cover the pan with a top or foil to hold in moisture.
  9. Allow to cool.
  10. Cut into squares and serve.
