Simple Taco Salad-ci

- 1lb ground beef shopping list
- 3T taco seasoning(either packaged or home blended) shopping list
- 1/2 cup water(less if using your own seasoning blend, rather than the packaged--just enough to moisten the seasonings and meat) shopping list
- 2 small(or 1 large) bell pepper, diced shopping list
- 1 small onion or 3-4 green onions, chopped shopping list
- 1 can ripe olives, chopped or sliced shopping list
- 1/4 cup green olives, chopped shopping list
- sliced jalapenos(to your taste) shopping list
- 2 cups cheddar, pepperjack or Mexican blend cheese, shredded shopping list
- leaf lettuce(I like romaine hearts), shredded shopping list
- Fried tortilla chips, or purchased corn chips or tortilla chips shopping list
- sour cream , salsa, guacamole, taco sauce for serving, if desired shopping list
How to make it
- Brown beef and, if using a regular onion, add that halfway through cooking. Drain, if needed, when browned.
- Add seasoning and water(as needed), bring to boil and simmer to thicken.
- Meanwhile, combine peppers, olives, jalapenos and green onion(if using) in large bowl.
- When meat mixture is thickened, remove from heat and let cool about 5 minutes.
- Add to veggies in bowl, toss to combine and cool.
- Add cheese and toss to combine, again.
- Add shredded lettuce to individual serving bowl, then top with meat/veggie/cheese mixture.
- Add desired toppings, as above, like sour cream, taco sauce, salsa or guacamole, and serve with tortilla or corn chips.
- This is good the next day, too, even cold.
- ---for photograph serving, I topped lettuce with the meat/veggie mixture, THEN shredded cheese and topping of sour cream(honestly, to make the picture prettier;)...I then added a bit of homemade salsa to serve, and proceeded to mix the rest of the cheese with the rest of the meat/veggie mixture, as directed in recipe :)
- *please note, you can make this a vegetarian dish by combining all veggies and serving over a layer of refried beans, instead of meat(I have a slow cooker recipe listed, as well).
