How to make it

  • Heat oven to broil. Lightly coat baking dish with cooking spray
  • Place salmon,flesh side up,in baking dish and lightly season with salt and pepper. Broil without turning until salmon is cooked through 8 to 10 mins.
  • Meanwhile,heat oil in large saucepan over med heat. Add onion and garlic and cook,stirring occassionally,until softened,about 7 mins. Stir in the tomatoes,spinach and capers. Cook 2 mins. longer. Remove pan from heat.
  • Remove salmon from broiler and transfer to 4 serving plates. Spoon tomato mixture over salmon,squeeze lemon wedges over top and serve warm.

    I made this a few days ago and it was delicious! I used some mini-heirloom tomatoes from a local farm which were perfectly sweet. I love salmon and love to prepare it different ways, my beau on the other hand is less adventurous when it comes to fish (he'll only eat salmon and only a few ways) and he really enjoyed this. I kept the capers to myself though :-) Thanks for another great one!

    Pat I made this last night, and we absolutely loved it! It was super easy, and fantastic! Bryan is not a fish lover, (I can get away with it every 2 or 3 months, lol) and he cleaned his plate, said it was really good, and he'd eat it again. Believe me, that's high praise coming from him. lol I added some kalamata olives to my own spinach mixture - Heaven forbid I give him an olive, lol, just because I had a tiny bit I needed to use up, and that was good, too! Thanks Pat!

    This was what I settled on for a quick, lightish dinner, tonight. I served it with bread and asparagus with only olive oil and salt. I did use what I had, so I halved/quartered cherry tomatoes instead of using plum. I added sea salt and fresh ground pepper to both the sauce and the salmon just before cooking. What a great, quick and EASY salmon dish. Thank you pleclare! (I added a photo)

    I thought this was lovely...bit too light if you have a hungry bloke in the house but even he liked the really yummy, almost creamy sauce. don't forget the lemon like i nearly did coz that lifts the whole thing. super easy tasty dish.
