how about ham chunks , milk or cream- garlic.rosemary
how about some type scalloped potatoes or a casserole of some type or even a mashed potatoes gourmet style hahahaha


This needs bacon for sure and bell peppers so it can be turned into Potatoes O'Brien casserole. Yummers.


Potatoe Lasagna
1.Potatoes
2. sour cream (low fat, fat free or regular)
3 ricotta cheese...(low fat or regular)
4. black pepper
5. scallions
PLEASE ADD MORE INGREDIENTS
6. Mozzarella Cheese
7. Parmesan Cheese
8. Veggies, Italian Sausage or Ground Beef
9. Homemade or jarred spaghetti sauce
Layer like a lasagna.


Love these ideas....here is another one. It is a take on broccoli and rice casserole


Shrimp Broccoli Casserole
Dice those potato's and par boil them, drain well
Dice shrimp and saute in a little butter
Frozen or fresh broccoli cooked
Mix sour cream, ricotta, 1can cream of chicken soup, might need to add a little milk if too thick, bpepper, creole seasoning and finely diced scallions together with the potato, broccoli and shrimp. Place in greased casserole dish and top with shredded cheese. Bake of course 45-60 min.


Cooked pasta or rice for me and even ground turkey

OK here we go:

Ricota Spinach Tarte

I would make the potatos into a potato crust:

potatoes, scallions, Parmesan and pepper in a large bowl. Stir in eggs and mix until well blended.
Use a tart pan and spray the pan with butter spray
press pot. mix in and bake at 325 for 10 minutes.

finely chop scallions, 1 clove chopped garlic, defrosted spinach
cook in saute pan until 1/2 -3/4 done
cool for a bit and place in bowl

add egg and 1/2 cup parmesan cheeseto ricotta and salt and pepper as disired and whisk briskly

In your 325 F oven place your tart pan

Cook until not wobbly (since I haven't made it I cannot give time)

Serve immediately or refrig for later use

but serve warm with a dollop (love that word) of sour cream.
That's it

Fancy Twice Baked Potatoes

2 Large Baking Potatoes, Baked, Scooped out(Save the Shells), and run through a food mill.
2 Slices Pancetta rendered and chopped
4 Basil Leaves, shredded
¾ cup Ricotta Cheese
½ cup Sour Cream
¼ cup finely grated Parmesan
3 Scallions finely chopped
2 Tbls melted clarified Butter
Salt & Pepper to taste.

Combine Basil, Ricotta, Sour Cream, Parmesan and Scallions. Set aside enough for garnish.

Combine the Ricotta mixture with the Potatoes, Butter and Pancetta. Season with Salt and Pepper. Stuff the Potato shells mounding high on top if necessary. Bake approx. 30 minutes at 325 finishing the last couple of mins under the broiler until the tops are golden. Serve with a “Dollop” he he of
the reserved ricotta mixture and top with fresh ground Black Pepper.


Cheesy Gnocci
Ingredients:

lb of baked Potatoes
2 cups flour
1/2 tsp. baking powder
2 eggs, slightly beaten
Salt and nutmeg to taste
1 cup sour cream (low fat, fat free or regular)
1 cup ricotta cheese...(low fat or regular)
1 teaspoon of fresh ground black pepper
A bunch scallions for garnish.
Romano cheese for topping as wall.
Directions:

1.Bake peel and pass potatoes through a ricer.
2. Combine ingredients in bowl. Mix well. Knead lightly..
3. Form dough into walnut size balls.
4. Roll each ball in a log shape 1/2 inch thick. Roll them in Wonder flour so they do not stick.
5. Cut log into 1/2 inch pieces and leave dough spread out on wax paper or pasta board until ready to cook.
6. Bring large pan of water to a full boil. (1 teaspoon of salt in water optional). Place gnocchi into water and cook at vigorous boil until gnocchi float on top.
7. Drain and serve with spaghetti sauce
8 garnish with Romano and Scallions.
