- Cheese Cauliflower Soup
- 1/2 cup margarine
- 1/4 cup onion - minced
- 1/2 stalk celery - chopped
- 1/4 cup carrots - grated
- 1/2 cup flour
- 2 tablespoons cornstarch
- 2 cups chicken stock
- 2 cups chopped fresh cauliflower
- 4 cups milk
- 2 cups velveeta cheese - cubed
- Melt the margarine in a stock pot.
- Sauté the onions, celery and grated carrots in the margarine.
- Blend in the flour and cornstarch.
- Add the chicken stock and milk, and cook until thick.
- Add the cheese and cauliflower, cover and simmer for 1 hour.
- Top with fresh pepper and herbs (optional)
