Ingredients

Cheese Cauliflower Soup

1/2 cup margarine

1/4 cup onion - minced

1/2 stalk celery - chopped

1/4 cup carrots - grated

1/2 cup flour

2 tablespoons cornstarch

2 cups chicken stock

2 cups chopped fresh cauliflower

4 cups milk

2 cups velveeta cheese - cubed

Melt the margarine in a stock pot.

Sauté the onions, celery and grated carrots in the margarine.

Blend in the flour and cornstarch.

Add the chicken stock and milk, and cook until thick.

Add the cheese and cauliflower, cover and simmer for 1 hour.

Top with fresh pepper and herbs (optional)
