Ingredients
  • MEATLOAF (my basic meatloaf recipe really, with spinach / cheese filling)
  • 2.5 -3 lbs. 97% lean ground beef or sirloin
  • 1 egg, beaten.
  • 1/2 white onion, chopped
  • 1/4 c pamresan cheese, grated fine
  • 1/2 c +/- Italian Bread Crumbs
  • 2 T chopped garlic
  • 1 envelope beefy onon soup mix
  • 2 T Worcestershire
  • Garlic Pepper
  • Seasoned Salt
  • FILLING
  • 10 oz spinach, thawed and drained
  • 1/4 c parmesan
  • 1 c shredded swiss cheese, (or any white cheese, Italian blend would be good)
  • 2 T chopped garlic
  • 2 T Mayo or sour cream
  • 3-4 chopped artichoke hearts
  • Dash Red Pepper Flakes
  • Hot Sauce or Cayenne (drop or dash, optional)
  • Salt and Pepper

Directions
  1. Mix meatloaf ingredients by hand
  2. Pat out flat on waxed paper into large rectangle, about 1 inch thick
  3. Mix filling and spread out over meat, leaving a good 2 inch border
  4. Roll jellyroll style, using the long side, pinch ends together, and meshing together if breaks apart anywhere
  5. Transfer to large casserole dish with lid
  6. Cover and microwave 20 minutes, check, and I zapped for another 4 minutes at that point to get the edges a little crusty.
  7. ***NOTE***
  8. Last time I made this, I used leftover spinach artichoke dip, and it worked great, too!
  9. I like to saute my spinach with the chopped garlic and seasoning,, then drain, then stir in cheese and mayo/sour cream.
  10. ***Rolling the meatloaf***
  11. If you don't want to roll the meatloaf, you can divide the meatloaf mixture in half, form a canal in the middle, spoon in the spinach mixture, the cover with the remaining meatloaf mixture and cook the same way.

I picked this up in the Recipe Swap, and while the flavors sounded great, I have never made meatloaf in the microwave, so this was an adventure. :) First, I did add mushrooms cus we love 'em and we had 'em. They were a fantastic addition. The bite of the stuffing was great with the mild beef. The only problem I really had, did, indeed, come from the cooking...surely it was just cus I have no experience with actually COOKING in the microwave. I rolled it easily...used the wax paper to help roll it as I do a bamboo mat for rolling sushi. It looked so pretty and all together. Put it in the biggest dish I could get in the microwave, and came out with a bit different looking finished dish than I put in! hehehe... thus, no photo...it wouldn't have fairly represented the intention, so didn't wanna submit it just cus I'm not a microwave cook. Interesting addition and good flavors! Thanks, Sparrow!


The addition of mushrooms would create more water which would change the texture and cause the meatloaf to lose some of it's shape, and not hold in the filling. I believe in recipe swap you said something about using fresh spinach when you made it...did you saute and drain it first? That would have also created more liquid that cooking the spinach then draining all the liquid. Glad you enjoyed the flavors, though!


FYI Keni did say on my profile page after she made this that she did use fresh spinach and mushrooms, and did not cook or drain them first...that will create too much liquid. If you use these items, saute and drain them first, or, the dish will not retain it's shape. I have made this several times since that first night, and it always retains it's shape and texture.
