Ingredients

How to make it

  • In a medium saucepan, bring chicken broth, salt and olive oil to a boil.
  • Stir in couscous, lemon zest and chives.
  • Remove from heat and let sit, covered, for 5 minutes.
  • Fluff with a fork and add lemon juice, salt and pepper.
  • Garnish with chopped scallions, if desired.

    I made this today for a ladies lunch. I'm not a big fan of couscous (boring) but this was excellent. I give you 5 yums. Served it with baked chicken and articoke.

    This recipe is wonderful! I loved the blend of flavors; the lemon added such a delicious flavor. I will be making this again! I used half whole wheat couscous and half regular, and dried chives instead of fresh, because I didn't have any. I am going to post a picture right now; thanks for the great recipe!
