Lemon Chive Couscous

- 1 cup chicken broth shopping list
- 1/4 tsp. salt (I usually use only if using my homemade chicken broth - canned is usually salty enough) shopping list
- 2 tbsp. olive oil shopping list
- 3/4 cup couscous, regular or whole wheat shopping list
- 1 tbsp. freshly grated lemon zest shopping list
- 2 tbsp. fresh chives, finely snipped shopping list
- 1 tbsp. lemon juice shopping list
- salt and pepper to taste shopping list
- Chopped scallions (optional) shopping list
How to make it
- In a medium saucepan, bring chicken broth, salt and olive oil to a boil.
- Stir in couscous, lemon zest and chives.
- Remove from heat and let sit, covered, for 5 minutes.
- Fluff with a fork and add lemon juice, salt and pepper.
- Garnish with chopped scallions, if desired.

We love couscous and this sounds like a very light and refreshing various that would go great alongside chicken. Great post and a high 5.
