I looked in the pantry and there was a can of baby corn and a can of water chestnuts. Hmmm. In the freezer there was a bag of bay scallops. And away we go!!

Ingredients
  • 1 small bag long grain rice, rinsed
  • 1 bag frozen stir-fry veggies
  • 1 sliced yellow onion sliced in strips
  • 2 cloves slivered garlic
  • 1 can baby corn drained
  • 1 can water chestnuts
  • 1 lime juiced
  • olive oil
  • pepper (not pepper mill)
  • kosher salt
  • sesame oil stir fry sauce
  • chicken broth
  • cornstarch
  • sesame seeds, toasted

Directions
  1. About an hour before you are going to cook, marinate the thawed scallops, onions, pinch of salt and ground pepper to taste in a bowl with enough oilive oil to cover and add juice of one lime.
  2. Cover and refrigerate.
  3. When ready to cook the stir-fry start your rice and should be done at the same time. Cook according to directions or use a rice steamer.
  4. In a large saute pan twice around with sesame oil.Medium high.
  5. add garlic for 2 minutes.
  6. quickly cook and then remove the partially defrosted veggie stir-fry
  7. turning stove down to medium add the baby corn and water chestnuts for 2 minutes.
  8. While that is cooking drain the scallop onions and quickly rinse off excess. Just a spritz.
  9. Add to pan. Put back to medium high. Cook for 3 minutes stirring constantly.
  10. Add 1 can broth bringing to boil inpan
  11. Add cornstarch to thicken stirring to blend after each addition.
  12. Add stir fry sauce 1 tablespoon at a time until it is to your taste.
  13. Remove from heat
  14. Add stir-fry veggies and cover.
  15. ----------
  16. Keep the veggies 'green'
  17. ---------
  18. Serve rice in each bowl and add stir-fry and delicious gravy over.
  19. Sprinkle toasted sesame seeds over.

Works for my fiver Jm..you know I love my stir frys..after the one I did last night..I think I love them all!! :) was so funny JB USUALLY hates

Great recipe Joymarie I can just picture it in my mind. A nice plate of steamed rice toped with a stir fry of all of these colorful vegetables is just what I need to satisfy me after a long day in my back yard.
