Melt In Your Mouth Pecan Shortbread

- 1 3/4 cup plain flour (Don’t substitute self rising, here.) shopping list
- 1/2 cup sugar shopping list
- 1 cup butter shopping list
- 1/2 teaspoon vanilla shopping list
- pinch of salt shopping list
- 1 cup pecans, lightly toasted and coarsely ground shopping list
- 2 teaspoons almond extract shopping list
How to make it
- Preheat oven to 325.
- Mix butter and sugar until fluffy. Gradually add flour. Add vanilla, salt. Stir in pecans and almond extract. Chill dough 1-2 hours. Lightly flour surface and roll out dough to 1/4 inch thick. Sprinkle surface with sugar. Cut our with 2 1/2 “ cookie cutter. Lay on parchment paper lined cookie sheet. Bake for 15-20 minutes. Do not brown.
