Goat Cheese with Garlic and Herbs

- 1 log of Montrachet cheese (11 ounces) shopping list
- 1 cup of olive oil shopping list
- 4 large garlic cloves coarsely chopped shopping list
- 1 tbsp of snipped chives shopping list
- 1 1/2 tsp of fresh thyme leaves shopping list
- 1 1/2 tsp of fresh basil leaves shopping list
- 1 tsp of dried rosemary shopping list
- 1 crumbled bay leaf shopping list
- fresh ground black pepper, several grinds shopping list
- lemon zest threads, about 1/2 lemon shopping list
- sharp bitter greens, endive, radicchio, watercress mix shopping list
- slices of toasted French bread shopping list
- sparse sprinkle of balsamic vinegar for each plate shopping list
How to make it
- Slice the cheese into 1/2 inch disks and place them in a wide-mouthed glass jar.
- Combine the rest of the ingredients *up to the greens* and pour over the cheese to cover it completely.
- Allow to sit for 3 days. (I keep it refrigerated)
- Serve herbed cheese at room temperature on top of a bitter green salad, drizzled with a bit of the best balsalmic vinegar and slices of toasted french bread on the side.
