How to make it

  • Spray bread cubes with cooking spray.
  • Arrange on baking sheet and toast in 350 oven for about 5 minutes, or until toasty.
  • Place half the cubes in greased 9x13 pan.
  • Drain canned tomatoes, reserving liquid.
  • Top bread cubes with half of each; fresh tomato slices, reserved tomato liquid (drizzled), ricotta cheese (blob small spoonfuls here and there), drizzle of olive oil, canned tomatoes, seasoned salt, oregano, and minced garlic. Top this with the last half of the bread cubes, repeat layers and finally sprinkle with parmesan cheese.
  • Bake covered w/ foil at 350 for 30 minutes, uncover and allow to brown for a few minutes more. :-)
  • Enjoy w/ a nice caesar salad for a hearty and complete meal!

    Oh man this sounds super good, and I always have all the ingredients. This is the kind of stuff I can handle when I come home late, pooped out of my head. Yeah baby, gimmie them carbs! Love the use of ricotta...totally didn't expect to see it but LOVE it. Got my fives.
