Oh So Quick Cold Night Soup Recipe

Ingredients
  • 1 large onion, chopped
  • 1 cup chopped celery
  • 4 cloves garlic, minced
  • 2 cans mixed vegetables,drained
  • 1 large can whole tomatoes
  • small can of tomato paste
  • 6 cups chicken or vegetable stock
  • 2 teaspoons Italian seasoning
  • 2 potatoes, peeled and cubed
  • 2 cups large elbow macaroni
  • 3 carrots, chopped
  • 1 teaspoon cracked pepper
  • salt to taste
  • 1/2 stick butter

Directions
  1. In large soup pot saute onions, celery, garlic in butter until tender.
  2. Add broth and bring to a boil.
  3. Crush tomatoes and add to broth.
  4. Stir in vegetables, potatoes, and carrots.
  5. Cover and cook over medium heat for 10 minutes.
  6. Stir in seasonings, paste, and macaroni.
  7. Continue to cook, covered for 20 minutes.
  8. Adjust seasonings and cook an additional 5 minutes.

Loved the soup. Was much more than I expected. Did a few substitutions. Instead of macaroni, I used mini pennes, and replaced the canned mixed veggies with 2 cups of frozen mixed veggies. Great recipe, graat flavors.


I am so in the soup mood, with snow flying and winds howling up here...I want to make up a batch of this today to get us through next week. It sounds comforting, warm, and oh so good!
