Vienna Bars

- 1 c. lightly salted butter shopping list
- 1/2 c. sugar shopping list
- 1/4 tsp. salt shopping list
- 2 large egg yolks shopping list
- 2 1/2 c. all purpose flour shopping list
- 1. 10oz jar of rasberry perserves or red currant jelly shopping list
- 1 c. chocolate bits ( I use mini semi sweet morsels ) shopping list
- 4 large egg whites shopping list
- 2 cups finely ground walnuts shopping list
- 1 c. sugar shopping list
How to make it
- This is for the crust :
- In a large bowl combine room temp. butter and 1/2 c. sugar, work with wooden spoon til creamy.
- mix in 1/4 tsp. salt and 2 large egg yolks, gradually add 2 1/2 c. flour.
- mix until dough becomes firm, then knead with fingers to make a smooth dough.
- Pat dough evenly in a 12X17 inch jelly roll pan.
- Bake crust for 15 - 20 minutes til lightly browned.
- filling :
- remove crust from oven and spread the perserves on it and 1 c. chocolate morsels.
- In a deep bowl with a mixer, beat 4 egg whites til stiff peaks form.
- Using a rubber spatula, fold in the 2 c. finely ground walnuts and 1 c. sugar.
- Gently spread mixture over the chocolate and jelly.
- Bake for about 25 minutes until browned at 350 degrees.
- cool for 15 minutes and then cut into small squares.
- this will make about 50 or more small bars.
- You want to make them small because these bars are very rich.
- Enjoy with delight.
