Ingredients

How to make it

  • In 2 quart saucepan, heat olive oil and cook garlic and green pepper until almost tender. Add onion and cook until tender, but not browned. Stir in tomatoes, tomato sauce, lime junce, bay leaf, Worcestershire sauce and oregano. Add salt and pepper to taste. Simmer stirring occasionally, until slightly thickened and well blended, about 45 to 50 minutes. Wash and dry fish. Brush fish on both sides with vegetable oil. Place fish, skin side down, on greased or foil-lined baking pan. Bake at 350 F for 10 minutes.
  • Cover fish with sauce, sprinkle with breadcrumbs and dot with butter. Bake about 10 to 15 minutes more, until fish flakes easily withn tested with a fork and top is lightly browned.

    A year? It took me a YEAR to get around to making this one?? I've made several of your recipes, but how this one got by me all the time, I don't know. This was SO easy and so tasty. Since I can't get the great seafood, fresh, like you do, I used tilapia...and it was wonderful. :) All I did differently was add 2 jalapenos to the peppers and onions and serve it with chopped cilantro. Served it with rice, as you did, and it was a satisfying, yet light meal. Thank you, Rottman, as always, I'm very pleased with your stuff! ;) (added my pic)
