Chicken Tortellini With A Mushroom Spinach Sauce

- 16 oz. pckg. chicken tortellini (I use Buitoni, but any kind will work) shopping list
- 1/2 yellow onion shopping list
- 2-3 cloves garlic shopping list
- 4 oz. sliced mushrooms shopping list
- 2 14.5 oz. cans diced tomatoes shopping list
- 1 bunch spinach ripped off stems shopping list
- 1/4 cup ricotta cheese shopping list
- 1 tsp. (or to taste) italian seasoning shopping list
- 1 tsp. (or to taste) red pepper flakes shopping list
- S&P to taste shopping list
- parmesan cheese shopping list
How to make it
- Cook tortellini according to package.
- Saute onion and garlic about 3 minutes until tender. Add mushrooms and saute 1-2 minutes. Add tomatoes and cook about 20 minutes. Next add spinach and cook until wilted. Stir in the ricotta and add more to desired thickness. Last add in the spices and stir. Add heaping mounds of sauce to the tortellini.
- Garnish with parmesan after plated.
- Enjoy!!!
- Note: If you want the sauce thicker...just add a little cornstarch water mix to your thickness liking ;)
