Ingredients
  • 16 oz. pckg. chicken tortellini (I use Buitoni, but any kind will work)
  • 1/2 yellow onion
  • 2-3 cloves garlic
  • 4 oz. sliced mushrooms
  • 2 14.5 oz. cans diced tomatoes
  • 1 bunch spinach ripped off stems
  • 1/4 cup ricotta cheese
  • 1 tsp. (or to taste) Italian seasoning
  • 1 tsp. (or to taste) red pepper flakes
  • S&P to taste
  • Parmesan cheese

Directions
  1. Cook tortellini according to package.
  2. Saute onion and garlic about 3 minutes until tender. Add mushrooms and saute 1-2 minutes. Add tomatoes and cook about 20 minutes. Next add spinach and cook until wilted. Stir in the ricotta and add more to desired thickness. Last add in the spices and stir. Add heaping mounds of sauce to the tortellini.
  3. Garnish with parmesan after plated.
  4. Enjoy!!!
  5. Note: If you want the sauce thicker...just add a little cornstarch water mix to your thickness liking ;)

This sounds and looks great! I'll have to try this! I love this kind of recipe because you only need to use one pot!


This was very good! Instead of cooking everything together, I sauteed the onions, garlic, mushrooms and seasonings in a bit of olive oil first. Then I added the spinach and let it wilt down before adding the tomatoes. To thicken the sauce and make it a little creamy, I added about 1/2 cup of ricotta. This worked perfectly and I highly recommend it! I've never used mushrooms and spinach in my tomato sauce, but I really liked it! Thanks for turning me on to a new way of making sauce! Great recipe! The photo was taken without the ricotta.
