How to make it

  • Cook and drain spinach... (I like to remove the paper on the box and place the box of spinach on a microwave safe plate and cook for 5 1/2 minutes...the spinach then just needs to be removed from the box and drained well.....easy!
  • Combine all the ingredients except the spinach and the stuffing...blend well.
  • Add the drained cooled spinach and blend thoroughly.
  • Add the stuffing and mix together.
  • Form into 1 inch balls and place on a lined cookie sheet ( I like to use a cookie scoop)
  • Freeze until they are hard.
  • Bake at 350 for about 20-25 minutes until slightly browned.
  • Serve and enjoy!
  • Note~~~ If you do not want to bake at this point, after the spinach balls are frozen, I place them into a zip-lock freezer bag, pop into the freezer and remove as many as I want or need when needed.
  • I got 55 spinach balls out of this recipe today....

    Made this for our Super bowl gathering. Our vegetarian nephew just loved them and took the extras home. (Yes, there were left-overs but there was sooooooo much food that there were left-overs of everything.)
    I didn't have the herb dressing that I believed I did, so I made my own. I could have picked better herbs, but that was my error – not the recipe's. I liked them hot or cold but they are best hot. Some thought a dipping sauce would be good. Perhaps some kind of lemon based.
    We will make these again and want to try other veggies. The convenience of having them frozen and just cooking as many as you want is a real plus.

    These were very good! I made them as written except I used 1/2 the butter and omitted the thyme (not a big fan of that spice)...This is a great idea for a party appetizer! I think I'll try it again with different cheeses...maybe feta! I think some sort of unique dipping sauce would be a great idea also! Any suggestions? Thanks Lori! Great recipe!
