Lofat Penne With Spicy Vodka Cream Sauce Recipe

This is my lowfat verson of penne with spicy vodka tomato cream sauce by meals4abbey. for those of you following WW comes out to about 7.5 points for a heaping portion.

Ingredients
  • cooking spray
  • 3 turkey sausages
  • 4 cloves of garlic, minced
  • 1 tsp of crushed red pepper flakes
  • 1 can of crushed tomatos
  • 1 can of diced tomatoes
  • 1 pound of penne pasta-cooked and drained
  • 1/8 cup of vodka
  • 1/2 cup of fat free half and half
  • 1/4 cup of basil
  • 1/3 cup of reduced fat parmesan cheese

Directions
  1. In a large skillet, heat pam over moderate heat. Remove casing from Turkey sausage and ad the sausage to the skillet. Cook, breaking up the meat until brown. Add garlic and red pepper flakes.
  2. add tomatoes and bring to a boil.
  3. Reduce heat and simmer for 15 minutes
  4. Add vodka, half and half and cheese and bring to a boil
  5. Reduce heat to low and add pasta toss for 1 minute.
  6. Stir in basil and serve!!

I made this last night and it was very good! My whole family loved this! I used 7 cups of marinara sauce, so I doubled the vodka, half n' half and the cheese. I know I'll be making this a lot!!! Great idea for a low fat recipe!

I made this again last night! This time I used 1 lb. of 95% lean chopmeat and 14 fresh chopped basil leaves for 7 cups of sauce...This is very good! I posted a pic for you. Feel free to replace it with your own whenever you want!

Hey, what's with the low fat recipes? I'm thinking with the vodka if one gets buzzed enough it won't matter if they're a little chunky during that moment!
Seriuosly though, do you do alot of reduced fat cooking for health reasons?

Alterations


I didn't have any fresh basil, only dried but I am sure it would be great with Fresh!!


Another suggestion to make it even more figure friendly would be to substitute whole grain or whole wheat pasta for the white pasta. Though, the flavor might suffer some. ;-)
