This Is One of My Families Favorite Dishes...Especially The Hubby!!! Usually Make This With Jalapeno Cornbread!

Ingredients
  • 1 Large Chuck Roast Cut and Cubed Like Stew Meat
  • 3 Tablespoons of Cumin
  • Salt & Pepper to Taste
  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon of Oregano
  • 1 can of Tomatoe Sauce and Then Fill Can with Water
  • Green Chile Sauce:
  • 2 Cans of Whole Roasted Chiles
  • Half Lemon Squeezed
  • 1 Large Bell Pepper
  • 2 Tablespoons of Sour Cream
  • 1/2 Cup of Half and Half Cream
  • 1/4 Cup of Chopped Cilantro
  • Salt & Pepper to Taste
  • Directions:
  • Blend All in Blender Set Aside
  • 1 Pkg. of Flour Tortillas (Large Taco Size)
  • 1 Large Pkg. of 4 Mexican Cheese
  • 1 Tub of Chopped Red, Green & Yellow Bell Peppers
  • (Pan Saute the Peppers in 1 Tsp. Butter)

Directions
  1. Direction:
  2. Combine Stew Meat, Cumin, Salt & Pepper, Garlic Powder, Oregano,
  3. Tomatoe Sauce and Can of Water All in Large Pot with Lid and Cook On Stove Top for 1 1/2 Hours or Until the Meat Starts to Shred
  4. Let Stand and Cool When Done and Then Shred.
  5. Green Chile Sauce:
  6. 2 Cans of Whole Roasted Chiles
  7. Half Lemon Squeezed
  8. 1 Large Bell Pepper
  9. 2 Tablespoons of Sour Cream
  10. 1/2 Cup of Half and Half Cream
  11. 1/4 Cup of Chopped Cilantro
  12. Salt & Pepper to Taste
  13. Directions:
  14. Blend All in Blender Set Aside
  15. 1 Pkg. of Flour Tortillas (Large Taco Size)
  16. 1 Large Pkg. of 4 Mexican Cheese
  17. 1 Tub of Chopped Red, Green & Yellow Bell Peppers
  18. (Pan Saute the Peppers in 1 Tsp. Butter)
  19. Direction:
  20. Oil A 13 x 9 Cake Pan
  21. Spoon Meat in A Row Length Wise in Tortilla
  22. the Roll Up and Lay In Pan Sise By Side Long Ways
  23. Then Pour Green Chile Sauce Over The Top, Add Cheese Across
  24. The Top of That...Then Pour Peppers Across the Cheese in A Line
  25. Bake 450...about 15 Minutes
  26. Until Cheese is Melted...Then It's Done and Ready to Eat
