This is a recipe from Austin's Restaurant here is Louisville. It appeared in the newspaper recently. This marinade has just about every ingredient from every marinade I've ever prepared. And it is FANTASTIC.

Ingredients
  • 1/2 cup soy sauce
  • 3/4 cup brown sugar
  • 1 cup Dijon mustard
  • 1 tbsp black pepper
  • 2 tbsp Worcestershire sauce
  • 1/4 cup bourbon
  • 1/4 cup honey
  • 24 oz sirloin steak (either one huge one or (4) 6 oz ones)

Directions
  1. Whisk all ingredients together in a bowl.
  2. Pat the steak dry with a paper towel.
  3. Pour the marinade in a gallon size zipper bag and add the steak(s)
  4. Marinate a minimum of 8 hours, turning the meat now and then.
  5. Remove steaks and discard marinade. Preheat grill to high heat.
  6. Cook to desired doneness turning only once if possible.

I bought a half angus steer a couple of months ago. Advantage, good grade of beef and cheap by the pound. Disadvantage, lot's of cuts of meat I normally don't purchase. So, I have several sirloin steaks to use. Some cuts of sirloin can be a little tough. This marinade (I did it for 36 hours) seems to solve that problem. The meat was tender and the flavor is fantastic. Even better if you drink a little of the bourbon while grilling (hiccup).. :]


That's funny, Doug. I like a little nip or two when I cook. "I always cook with wine, sometimes it ends up in the dish!" Marinade sounds great. Those little sirloins can be quite chewy; this sounds like a terrific way to flavor and tenderize them.


LOL, I buy bourbon by the 1/2 gallon so I have enough left to cook with... :]

Wow...this has to be good if bourbon is included...LOLOLOL...My son Austin asked why the steaks were named after him...LOLOOLOL...now we gotta splain ourselves....HAHAHAHHA...thanks Doug.

My family and I tried this recipe tonight. My husband really liked it. I didn't tell him there was whiskey in it until after he ate everything on his plate. He said "No wonder". My daughter really liked it too. This one is a keeper. THX!


Thanks for my friday night dinner, I just got an indoor grill yesterday and I am soo excited to try it out with this recipe. Will have to see what good cuts of meat are at the meat counter this evening!!

Alterations


Well, an alteration was forced on us a couple of days ago. Went to make this marinade and Pat (my wife) said oops, I used the last of the Dijon mustard. Now we live 6 miles from the store so I wasn't going to make that run. We searched around a litte and found a bottle of Spicy Brown Mustard. Sooooo in it went. Interesting twist. Spicier, more mustard taste and very successful.
