A new spin on German Potato Salad

Ingredients
- 6 medium potatoes
- 4 slices bacon
- 1 tablespoon onion, chopped
- 2 stalks celery, diced
- 1 teaspoon salt
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1/2 teaspoon ground dry mustard
- 1 tablespoon granulated sugar
- 1 cup beer
- 1/2 teaspoon hot pepper sauce
- 2 tablespoons fresh parsley, minced
Directions
- Cook potatoes in boiling salted water just until fork tender.
- Cool slightly, peel and slice potatoes.
- In skillet, fry bacon until crisp.
- Crumble bacon and combine with onion, celery and salt.
- In small saucepan, melt butter. Add flour and cook over medium heat, stirring constantly, for 1 minute.
- Add dry mustard and sugar.
- Slowly stir in beer and hot pepper sauce.
- Bring to a boil, stirring constantly.
- Pour over potatoes. Sprinkle with parsley and toss to coat
- Let stand one hour.
- Add bacon mixture and toss gently,

It feels a little strange, using flour for a potato salad sauce, but it reads also very intriguing - i shall try it next time i make potato salad - in about two weeks. looking forward tomy guest's comments and shall report. thank you for sharing this unusual recipe - i thought i'd seen them all - after all, i DO live here and we germans eat a lot of potato salad :-)
