My Grandmother use to make doughnuts on Tuesday. And I always wondered. Why only on Tuesday? But then again, I was from the generation of, children were to be seen and not heard....

Ingredients
  • 1 egg
  • 1 egg yolk
  • 1 cup canned or fresh pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup buttermilk
  • 1/4 cup brown sugar
  • 3 Tbs. unsalted butter, melted
  • 4 tsp. baking powder
  • 2 tsp. pumpkin pie spice
  • 1 tsp. table salt
  • 1/2 tsp. baking soda
  • Fold in; Pat out;
  • 3 cups sifted all-purpose flour
  • Fry In;
  • Vegetable oil

Directions
  1. Whisk egg and yolk together in a large bowl until frothy.
  2. Add pumpkin, sugar, butter and buttermilk; whisk until combined.
  3. Stir in baking powder,pie spice, salt, and soda.
  4. Fold flour in gradually until a sticky dough forms; cover with plastic wrap and freeze 15 minutes.
  5. meanwhile heat 2'' oil to 370 in an electric skillet deep fryer, or straight-sided pan over medium heat.
  6. Pat out dough on a well-floured surface to 1/2'' thick, then cut with 3;; and 1'' biscuit cutters dipped in flour.
  7. Transfer doughnuts and holes to a floured baking sheet using a spatula that's been dusted in flour.
  8. Fry doughnuts and holes in batches in the oil until browned about 3 minutes turning once (holes will cook faster). Drain on a paper towel-lined baking sheet.
  9. Finish with sugar or glaze.

  11. Apple Cider Glaze
  12. makes about 3/4 cup
  13. 1/4 cup apple cider
  14. Pinch of salt
  15. 3 cups powdered sugar
  16. heat cider and salt in small saucepan over low until hot.
  17. Off heat, whisk in powdered sugar until smooth.
  18. Dip cooled doughnuts in glaze and let stand about 5 minutes for glace to set.

  20. Cinnamon Sugar
  21. makes 1 cup
  22. 1 cup sugar
  23. 1 tsp. ground cinnamon
  24. Mix sugar and cinnamon in a small paper bag.
  25. Toss donuts and holes in sugar mixture while hot.
  26. ENJOY!!

Because your grandmother obviously thought Tuesdays were a good day for doughnuts, that's all - it was that simple back then! All kidding aside, these sound so good I want to run out and get some pumpkin right now...it's making me sit here and sigh as I read and re-read the recipe. These look wonderful and I have pumpkin in my deep freeze. My granmother had certain days that she made deserts. We never said the days of the week, we would say things like, Oh boy, todays blackwalnut muffin day,lol.

I like the idea of donut Tuesday. It sure beats wash the sheets Saturday. My mother would yell and then rip the sheets from under me every Saturday at 7:00 A.M., for 20 years. The donut recipe is great. I don't usually fry anything but now I may have to try it.-Lori

Gaga, I made these doughnuts this afternoon because I just happened to have most of the ingredients. The only thing I did not have on hand was the apple cider. I dusted half with the cinnamon sugar and the other with powdered sugar. Even though they are a cake doughnut, they are light and just wonderful. I added my pictures of your doughnuts that I made.
