Panko flakes are Japanese style bread crumbs, I just use them because they are crunchy and light. You can use any bread crumbs you like, even home-made.

Good morning, dear Marie. I made your salmon cakes at the end of last week and they were fantastic! I used the fresh fillet of salmon and made them exactly to your recipe. Served with baked yams with butter and olive oil and some roasted tomatoes/asparagus. Great meal! Thanks again so much for a great recipe. And have a wonderful day...~ Vickie
