At 6 hours I find a bean every eventuality undercooked. Turning up the crock to HI for the last two hours.
Didn't have the hambone so subbed 3/4 lb smoked bacon coarse chunked.

I just put my beans on!! I have never put on onion in them while they were cooking, however, I always put onion, relish, hot pepper juice with my cornbread and beans.
